For a couple weeks, when I was 13, after school I made dinner for my father, who arrived home from work around 5:30, while my mom was in the hospital. I did the best I could with simple stuff, and one night made us a baked sliced Spam loaf interspersed with mozzarella cheese slices, garnished in ketchup, that was a recipe on the can. I thought it was pretty good, and Dad ate some and praised my ingenuity and cooking. It wasn't till years later that I learned my father absolutely Hated Spam, after eating so much as a grunt in the South Pacific during WWII. He was a pretty good dad. 😏 Frankly, I would love to attend the Spam festival in Wikiki, or be there for any other reason.
