Eat the whole animal!

The Globe and Mail has a review of The Feasting Room, a small Toronto restaurant whose motto is "eat the whole animal!" The chef picks a different animal each week and creates a six-course tasting menu from its parts... all its parts. Some of the dishes from pig week included: pig's skin served with a bowl of creamy apple sauce, sweet-pea soup with ribbons of crunchy-chewy pig's ears, pig's spleen layered over pork belly and sage leaves and rolled into a pinwheel, pig's trotter stuffed with pork shoulder, and for dessert pistachio and pig's blood Nanaimo bars.

Shown in the picture is a dish from chicken week: chickens feet with strawberry maple glaze.

I'm curious how, exactly, they serve the feathers.

They would be served in a tickled fancy, of course!

Then there's that stuff in the gizzard, stomach, and intestines to mix into some kind of a dip I suppose.

No, chicken feet is, in fact a hand-food in some Eastern countries. I forget which but the Indochina Peninsula is forcing it's way to the front.

YES! Patty I have eaten chicken feet! LOTS of people the world over enjoy them. A quick google search turned up 1.7 million hits for chicken feet recipes. The taste? Not surprisingly, just like chicken!
P.S. As for the parts mentioned by expat, the gizzard contains lots of sand and other "grit" and would make a lousy dip. The gizzard itself, when cleaned chopped breaded and deep fried,MMM MMM Also YUMMY!

I have eaten gizzard and liver, but feet just look nasty to me.
