Sure, trains. You'd have to have clear signals seen from far away. But... "cut 'er onto a stock track" isn't quite what I envisioned. I had, "Take 5 minutes and then start up again. The tracks should be clear."

I thought "Go take a flying jump in the lake," but couldn't isolate it to a particular occupation.

I guessed something to do with trains, but not because of his hand or its position. When I saw what appears to be a pocket watch chain, I thought it had to be a job where knowing the correct time is important, and the railroad industry immediately came to mind.
